Running April 18–19, 2026 in Cortland County, New York, the 54th Annual Central New York Maple Festival is a beloved regional tradition that has been celebrating the region’s deep maple heritage for more than five decades.
What Is the CNY Maple Festival?
The Central New York Maple Festival is an annual two-day event celebrating the maple syrup industry and the Iroquois cultural traditions that gave rise to it. Long before European settlers arrived in upstate New York, the Haudenosaunee (Iroquois) Confederacy had mastered the art of collecting and processing maple sap. The CNY Maple Festival honors this legacy while showcasing the modern maple industry that makes New York one of the top maple-producing states in the country.
The Sweet Lineup of Events
Pancake Breakfasts
The festival’s most beloved tradition is the communal pancake breakfast, where locals and visitors gather in the morning for stacks of fluffy pancakes drenched in fresh maple syrup. It is simultaneously a meal and a ritual — a gathering of community around the table. Multiple sessions are typically offered across both days, so arrive early.
Pancake-Eating Contest
For the competitively hungry, the pancake-eating contest is a highlight of the weekend. Contestants attempt to down as many maple-syrup-soaked pancakes as possible in a set time, to the raucous encouragement of the crowd. It is wonderfully, gloriously ridiculous.
Maple Syrup-Making Demonstrations

The festival features live demonstrations of the entire syrup-making process — from tapping trees to boiling sap in traditional sugarhouses (sugar bushes). Airboat Rides
One of the more unexpected delights of the CNY Maple Festival is the availability of airboat rides — flat-bottomed, fan-propelled boats that skim across flooded fields and waterways. It’s a thrilling and uniquely upstate New York experience.

Cortland County is located in central New York, approximately 45 minutes south of Syracuse via Interstate 81. The area is known for its rolling hills, agricultural heritage, and outdoor recreation. Visitors coming from New York City can take Amtrak to Syracuse and rent a car from there.
